Grilled eel and rice Matsu

After receiving an order, we prepare each fish individually for each customer.The eels we use are sourced alive from carefully selected ponds such as Lake Hamana in Shizuoka Prefecture, Isshiki Town in Aichi Prefecture, and the Osumi Peninsula in Kagoshima Prefecture, and are transported by express or air freight.The reason for its deliciousness is that the eels are carefully deboned one by one by Daikoku's eel craftsmen, and then grilled with passion over Kishu Binchotan charcoal.

Daikoku's soba noodles are carefully selected from the producing areas.
We only use carefully selected buckwheat flour from Hokkaido or Echizen, with 90% buckwheat flour used in a 1:9 ratio! We use the pure white part (endosperm) in the center of the buckwheat seed in generous amounts, but without being limited by Sarashina, we have brought out the original sweetness and aroma of buckwheat.The soba soup is homemade, made with carefully aged broth, Rishiri kelp, Makurazaki bonito flakes, and several other types of dashi.
